Good morning world

Today I am feeling a little better and I decided to cook something different from soups. The past few days I have only fed myself with chicken soup and rice. Although I don’t have the energy to cook something extraordinary or difficult so I decided to make something easy.
For today the menu is lentils (greek name : fakes)

Ingredients

1 cup of lentils
1 big onion chopped
1 clove garlic chopped
1 or 2 bay leaves
1 cup chopped tomatoes
1/2 cup olive oil
Salt, pepper

Let’s cook

Place lentils in a large saucepan ,add enough water to cover by 1 inch. Bring water to a boil and cook until tender, about 10 minutes then  drain them. Pour into the saucepan the lentils, 1 quart water, the tomatoes , onion , garlic ,olive oil  and bay leaves. Add salt and pepper.
Bring to a boil. Reduce heat to medium-low, cover and simmer until the lentils have softened, 30 to 40 minutes, stirring occasionally. Add additional water if the soup becomes too thick.
